Chinese Barbecue Sauce
This first one goes great on Shrimps, Chicken or Pork and can be knocked up in 20 minutes. All we have to do is throw the ingredients in a pan, heat and stir, let it cool and Bob’s your uncle! The taste of China in your own back yard.
Ingredients:-
6 tablespoons hoisin sauce
2 tablespoons rice vinegar (white wine vinegar OK too)
1 tablespoon Thai fish sauce
1 tablespoon dark soy sauce
3 tablespoons honey
4 tablespoons finely chopped shallot
2 garlic cloves, crushed
1 tablespoon fresh ginger crushed
1/8 teaspoon Chinese five-spice powder
TIP - This recipe is high in honey and therefore will burn easily. Make sure you bbq on medium coals, (gently does it) and brush on the sauce towards the end of cooking.
Cha Siu Sauce
The other great Chinese flavour is Cha Siu. Technically Cha Siu is a marinade so this barbecue sauce recipe is adapted to work as a sauce and remember as before, only use it at the end of the cooking process because of the high sugar content.
Again prep is simple. Throw it all in a pan, heat and stir until dissolved, then allow to cool.
Ingredients:-
2 tablespoons sherry
8 tablespoons hoisin sauce
100ml or 4 fl oz light soy sauce
6 tablespoons sugar
4 cloves garlic, crushed
2 teaspoons black bean paste
2 teaspoons chinese 5-spice powder
1 teaspoon salt
Satay Sauce
Throw the lot below in a frying pan for 2-3 minutes until soft.
Ingredients:-
50g or 2oz roasted salted peanuts
2 tablespoons of groundnut oil
3 shallots thinly sliced
2 garlic cloves finely chopped
2 red chillies, seeded (or not depending on how you like it!)
2 teaspoons ground coriander
Then chuck in the rest:
50g 2oz crunchy peanut butter
175ml canned coconut milk
75ml or 3 fl oz water
1 tablespoon brown sugar
1 tablespoon lemon juice
Stir until evenly mixed. You can then simply pour it onto your barbecue food or coat your meat before cooking. It’s great on Chicken thighs in fact any meat on a skewer.
Thai Sweet Sauce
I couldn’t finish a page on asian style barbecue sauce recipes without doing this one. It’s great as a dipping sauce or just drizzle it over
fish.
Just get out the saucepan and heat the ingredients below.
Ingredients:-
6 tablespoons rice or white wine vinegar
4 tablespoons white sugar
Once the sugar has dissolved, throw in the rest, allow to cool and you're off!
