Arkansas BBQ Sauce Recipe
This recipe makes a great marinade for poultry, pork or beef. I marinade the meat for an hour before grilling and then baste the meat once or twice while cooking. This sauce is seriously spicy so go easy on the basting.
This sauce covers most cooking and is a good basic, if using it in conjunction with a
BBQ rub go light on basting. The yield on this recipe is massive so feel free to cut down the quantities by half.
This Arkansas BBQ sauce recipe has pedigree in that it is about 50 years old. There's a lot on the internet about "Shack" Arkansas BBQ sauce, other than being a similar "old timer" it's here that any resemblance ceases...but it's still a good recipe!
Yield:- 2 gallons
Preparation time:- 15 minutesCooking time:- 30 minutes Total time:- 45 minutesWet Ingredients:-
- 3 quarts red wine vinegar (1425ml)
- 2 quarts Water (950ml)
- 1 quart white wine (475ml)
- 1 quart ketchup (475ml)
- 1½ cups Worcestershire sauce (360ml)
- 1½ cups English mustard (360ml)
Dry Ingredients:-
- 1½ cups brown sugar (220g)
- 1½ cups salt
- ½ cup cracked black pepper
- ¼ cup Red pepper (chilli) flakes
Method:-
Throw all the wet ingredients into a pan. Apply the heat to bring it to the boil and as the contents heat up add the dry ingredients and whisk until you have everything dissolved.
Once boiling, turn down the heat and simmer for about ½ hour to allow the flavours to mingle and the sauce to reduce a little.
Now you can use immediately of store in a glass jar with a good seal. Make sure that your jar is sterilized with boiling water before adding the sauce. Do not store in aluminum.
Technically it does not need refrigerated, but I do.
