Indonesian Grilled Chicken

Who fancies Indonesian grilled chicken?
It's always nice to get some contributions from different parts of the world so thank you Rina for this great curry chicken barbeque recipe all the way from Jakarta, Indonesia!
It's an interesting recipe because the chicken is part cooked before you put it on the grill so in essence all we're using the grill for is to add some char flavor at the end.
Over to you Rina, I'll let you tell it in your own words:-
"I am Indonesian and actually this is just a basic recipe for Indonesian traditional fried chicken but it is also delicious if you bake or grill it.
You can also use it with any white meat, not just chicken.
Serves:- 4 people
Preparation Time:- 15 minutes
Cooking Time:- 25 minutes
Total Time:- 40 minutes
Ingredients:-
- 8 chicken thighs (boned and skin off)
- ½ cup or 120ml water
- 2 tablespoons olive oil
*base spices- 7 garlic cloves
- 5cm fresh turmeric
- 3cm fresh ginger
- 2 table spoon coriander seeds
- 1 teaspoon ground black pepper
- 1 fresh lemongrass
- 1 teaspoon curry powder
- salt to taste
*base sauce- 4 table spoon soy sauce
- 3 table spoon chili sauce
- 1 table spoon oyster sauce
Method
Put all the base spices with the exception of the lemongrass in a pestle and mortar or a food processor and grind to a pulp.
Then pound the lemongrass just until it breaks.
Over medium heat, tip all the base spices into a pan with a lid, stir in the olive oil and savor the aroma.
When fragrant, add the chicken into the pan and mix it gently. Add the water until the meat is approximately half covered.
Close the lid on the pan, let the juice reduce for about 10 minutes.
When the 10 minutes are up, take the pan off the heat and remove the chicken from the mix.
Now add the *base sauce ingredients into the pan with the cooked juice, mix well and allow to cool.
When cool, place the chicken back in the sauce and marinate for 1 hour in the refrigerator.
After the hour you can now fire up your grill and cook your chicken pieces over medium heat for a further 15 minutes turning regularly and brushing with the marinade / sauce
